A simple and easy side dish that goes with everything, that’s how I would describe this dish. And we all know the benefits of spinach are endless. The kids too enjoy this one and I get them involved in the cooking process – destemming the spinach! I’ve found that the more involved they are, the more likely they are to eat it!!
- 10 oz baby spinach, destemmed
- 2 garlic cloves, diced fine
- 2 cups Mushrooms, sliced
- Himalayan Salt, to taste
- Pepper, to taste
- 2 tbsps olive oil
- 1-2 tsp balsamic vinegar (optional)
- Heat the olive oil in a skillet over medium heat.
- Once hot, add the garlic and sauté for a minute. Remove from pan and set aside.
- Add the mushrooms and season with the salt and pepper, stirring occasionally for about 10 minutes.
- Add the spinach to the mix and keep turning until it has wilted.
- Now mix in the sautéed garlic and adjust seasoning.
- Turn off the heat, remove from pan and drizzle with the balsamic vinegar if you are using it. Serve hot!
