A simple and easy side dish that goes with everything, that’s how I would describe this dish. And we all know the benefits of spinach are endless. The kids too enjoy this one and I get them involved in the cooking process – destemming the spinach! I’ve found that the more involved they are, the more likely they are to eat it!!

  • 10 oz baby spinach, destemmed
  • 2 garlic cloves, diced fine
  • 2 cups Mushrooms, sliced
  • Himalayan Salt, to taste
  • Pepper, to taste
  • 2 tbsps olive oil
  • 1-2 tsp balsamic vinegar (optional)
  1. Heat the olive oil in a skillet over medium heat.
  2. Once hot, add the garlic and sauté for a minute. Remove from pan and set aside.
  3. Add the mushrooms and season with the salt and pepper, stirring occasionally for about 10 minutes.
  4. Add the spinach to the mix and keep turning until it has wilted.
  5. Now mix in the sautéed garlic and adjust seasoning.
  6. Turn off the heat, remove from pan and drizzle with the balsamic vinegar if you are using it. Serve hot!
