It’s time to fire up those grills and if you don’t have access to one, this recipe works just fine at home on a stovetop too. Light and fresh, there is some work to be done ahead, but trust me when I say, it’s totally worth it! And please, don’t just take my word for it!
- 4 skinless, boneless chicken breasts
- 1/2 cup fresh mint leaves
- 1/3 cup cilantro leaves
- Juice of half a lemon
- 1 tbsp olive oil
- 1 tbsp soy sauce
- 4 cloves garlic
- 1 tsp chili powder
- Pinch of turmeric powder
- 1/4 tsp ground black pepper
- Fresh mint leaves for garnish (optional)
- Ziploc bag
- Place chicken in the ziploc bag set in a shallow dish.
- In a blender, combine mint leaves, cilantro leaves, oil, lemon juice, soy sauce, garlic, turmeric powder, chili powder and pepper.
- Cover and blend until smooth and remove and pour over chicken.
- Turn the bag to coat the chicken evenly.
- Marinate chicken for a minimum of 4 hours. (Ideally marinate it the night before)
- Drain chicken, discarding remaining marinade.
- Cook on medium heat in a non stick pan until done. (If you are using a grill, place it directly on the wire rack and grill for 12-15 mins, turning just once).
