An easy protein to cook, a pork tenderloin is one of the most tender cuts of pork. It has a mild flavor, so it’s best when prepared with an added spice rub, marinade, stuffing or flavorful sauce. The recipe below works great for a weeknight dinner.
- 1-1/4 lb pork tenderloin
- 1 tsp garlic powder
- 1 tsp dried oregano
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp dried thyme
- Pinch of turmeric powder
- Himalayan salt, to taste
- 2 garlic cloves, chopped
- 1 tbsp olive oil
- Preheat the oven to 450 degrees F.
- In a separate bowl, mix all the dry ingredients (garlic powder, oregano, cumin, coriander, thyme and salt).
- Stir mixture until all the ingredients are well combined to form a seasoning.
- Sprinkle the mixture over the tenderloin, then rub the pork with the seasoning on all sides of the meat, pressing gently so the seasoning adheres well to the tenderloin.
- Heat a large skillet over medium-high and then add the olive oil.
- Add the minced garlic and saute, stirring, for 1 minute.
- Put tenderloin in the pan and cook for about 10 minutes, searing each side using tongs to turn the meat.
- Transfer meat to a roasting pan and bake for 20 minutes. (Tip: line the roasting pan with aluminum foil for easier clean up)
- Slice and serve.
