When the only vegetables you have in your fridge is some  zucchini and a green pepper this super easy recipe does the trick.

  • 3 tbsp olive oil
  • 1/2 tsp cumin seeds
  • 1/4 tsp whole brown mustard seeds
  • 1-1/4 lbs zucchini, peeled and cut into wedges
  • 1 large green pepper, quartered lengthwise, seeds removed and cut
  • 2 tbsp plain yogurt
  • 1 tbsp coriander powder
  • 1/2 tsp salt
  • 1/2 tsp chaat masala* OR a generous pinch of cayenne pepper and a squeeze of lemon juice
  1. Pour the oil into a large pan or wok and set over medium-high heat.
  2. When the oil is hot, add the cumin and mustard seeds together.
  3. As soon as the mustard seeds begin to pop (a few seconds), add the zucchini and the green pepper.
  4. Stir and fry for 5 minutes.
  5. Add the yogurt, and cook, stirring, until it has been absorbed.
  6. Reduce the heat to low and add the coriander and salt.
  7. Stir for a minute.
  8. Add the chaat masala and toss.
  9. Taste and adjust flavors accordingly.
  10. Serve hot.

*Chaat masala is a spice powder mix or masala used in South Asian cuisine, primarily in Indian, Bangladeshi and Pakistani cuisine. It typically consists of amchoor, cumin, coriander, dried ginger, salt, black pepper, asafoetida and chili powder. It can be store bought or made at home.
