Healthy Shrimp Bowl

It’s sooo hot!! Everyone I meet seems to be saying just that! And when it’s this hot, being in the kitchen is really not ideal so I decided to try something different. I really wasn’t sure how my kids would feel about this but it was a hit with them too. So stay cool and enjoy this cold meal!

  • 2 cups cooked brown rice
  • 1 tbsp. rice wine vinegar
  • 1 lb cooked shrimp
  • 3 tsp extra-virgin olive oil
  • Salt, to taste
  • 2 avocados, thinly sliced
  • 1/2 cup diced cucumber
  • 1 medium carrot, peeled and sliced into matchsticks
  • 4 tbsp mayonnaise
  • 2 tbsp sriracha
  • 2 tbsp lemon juice, divided
  1. In a bowl, toss cooked rice with rice wine vinegar.
  2. Season with salt to taste.
  3. Toss shrimp with 2 tablespoons of olive oil.
  4. Season with salt to taste and place on top of rice.
  5. Arrange avocado, cucumber and carrots on top of rice next to shrimp.
  6. Whisk together mayonnaise, sriracha and lemon juice and drizzle over the sushi bowl.
  7. Serve cold!
  • Notes:
  • 1.You could substitute the brown rice with spiralized zucchini for a healthier option.
  • 2. Instead of sriracha, use a ketchup-sriracha mix for a milder version of the sauce. (I did this for the kids)
