It’s sooo hot!! Everyone I meet seems to be saying just that! And when it’s this hot, being in the kitchen is really not ideal so I decided to try something different. I really wasn’t sure how my kids would feel about this but it was a hit with them too. So stay cool and enjoy this cold meal!
- 2 cups cooked brown rice
- 1 tbsp. rice wine vinegar
- 1 lb cooked shrimp
- 3 tsp extra-virgin olive oil
- Salt, to taste
- 2 avocados, thinly sliced
- 1/2 cup diced cucumber
- 1 medium carrot, peeled and sliced into matchsticks
- 4 tbsp mayonnaise
- 2 tbsp sriracha
- 2 tbsp lemon juice, divided
- In a bowl, toss cooked rice with rice wine vinegar.
- Season with salt to taste.
- Toss shrimp with 2 tablespoons of olive oil.
- Season with salt to taste and place on top of rice.
- Arrange avocado, cucumber and carrots on top of rice next to shrimp.
- Whisk together mayonnaise, sriracha and lemon juice and drizzle over the sushi bowl.
- Serve cold!
