Cauliflower is one of the newest members of the superfood family. I mean who hasn’t noticed it appearing more and more everywhere, including high end restaurants! And with good reason too. Newsweek has actually done a lovely feature on this vegetable which you can read here.

  • 1 cauliflower, cut into large pieces
  • 1/2 to 1 onion, thickly sliced
  • 2 tsp olive oil
  • 1/2 tsp turmeric powder
  • 1/2 tsp cumin powder
  • 1/2 tsp coriander powder
  • 1/2 tsp chili powder
  • 1/2 tsp garam masala
  • 1/4 tsp cinnamon (optional)
  • Salt, to taste
  • Pepper, to taste
  • Juice of 1/2 lemon
  1. Preheat oven to 425 degrees.
  2. Line a baking sheet with parchment paper.
  3. Put cauliflower and onion slices in large bowl or ziploc bag.
  4. Drizzle with some olive oil and toss to coat.
  5. Mix spices together in a small bowl and sprinkle over cauliflower.
  6. Seal ziploc (if using) and toss well to coat.
  7. Spread out evenly on the baking sheet.
  8. Loosely cover the baking sheet with a piece of aluminum foil.
  9. Bake for 15 mins.
  10. Remove foil and bake for another 10-15 mins, or until cauliflower is tender and browned.
  11. Drizzle lemon juice over the cauliflower and serve hot.
