Another school night and I find myself running behind. Between ballet, drama, soccer, etc I needed to make something that was quick and delicious which my foodie kids would approve of! That’s where this recipe saved the day. I kid you not, this is sooo easy that anyone can make it. Serve it with some brown rice and you have a winner!

I’ve used green onions/scallions in this recipe. Native to Asia, green onions — also called scallions — should make make regular appearances in health-conscious kitchens. Like white onions, they add pungent flavor to your dishes, though green onions are milder, so even if they’re used raw, they won’t overpower the taste of your dish.   • 1 lb ground beef
  • 1 cup onion, diced fine
  • 1 tbsp ginger garlic paste
  • 3/4 cup teriyaki sauce
  • 4 scallions/green onions, sliced
  • 1 tsp oil
  1. In a large skillet preheat oil over medium-high heat for about 1 minute.
  2. Add onion, garlic and ginger to the skillet and sauté for a minute.
  3. Next add the ground beef to the onion mix.
  4. Cook, breaking up the meat as you stir, until the beef is no longer pink and the onion is tender, approx 8 minutes.
  5. Drain, and return meat to skillet.
  6. Stir teriyaki sauce and half of the sliced green onions into the beef mixture.
  7. Reduce heat to a low simmer and cook for an additional 3-5 minutes, just until the sauce thickens slightly.
  8. Serve over rice, in tortillas, or in lettuce wraps.
