Bone Broth is literally the best elixir for good health, in my opinion! Whether it’s to use as a base for soups, cooking or just to drink in its natural form, chicken broth is loaded with health benefits. And I have my friend and holistic health coach, Traci to thank for introducing this magic potion to me.
I came across this interesting article while researching the benefits of bone broth and I whole heartedly agree with the author. I have been using bone broth for a while now to help ease my joints. Taken regularly, I find that my joints aren’t stiff and I don’t need as much medication as I am supposed to be taking! So hey, I will continue with my weekly regimen of bone broth at least for the foreseeable future. Cheers!
For the chicken broth:
- 1 lb. organic chicken thighs on the bone with skin
- 1 onion, quartered
- 2 stalks celery, diced
- 2 slices ginger
- 2 tbsp Apple cider vinegar
- 1/2 tsp turmeric powder
- Water
For the Lemon Ginger flavoring:
- 2 tbsp dried lemongrass
- 2 slices ginger
- Juice from 1/2 a lemon
- Sea salt, to taste
- Pepper, to taste

Place chicken thighs, onion, celery, turmeric powder, ginger and vinegar in slow cooker.

Add enough water to just cover the ingredients.

Cook for 8-12 hours on a low setting so broth is just barely simmering.

Strain broth. (Stop here if you don’t want to add a lemongrass flavor)

Place chicken broth, lemongrass and ginger in a saucepan and bring to boil.

Add the lemon juice to the broth.

Reduce heat to medium low and simmer for 10 minutes.

Season to taste with salt and pepper.

Strain and enjoy!
