Adapted from Everyday Paleo, this recipe is great for a wholesome lunch or to take along to a picnic. Easy and quick too so of course it’s a hit in my books.. specially on weekends when the last thing I want to do is cook!!!

Tuna has its own health benefits – it aids in weight loss and is good for the heart (www.livestrong.com). But as is with everything else, too much of anything is not good for you. I absolutely love this salad!!

  • 3-6oz cans of tuna, crumbled and drained
  • 2 large avocados, cut into cubes
  • 3 big handfuls of spinach, washed
  • 5 celery stalks, diced
  • 1/3 cup extra virgin olive oil
  • 3 tbsp apple cider vinegar
  • 2 garlic cloves minced (or 1tsp garlic powder)
  • 3 tbsp capers
  • Himalayan salt (to taste)
  • Black pepper (to taste)
  • 2 cups red grapes, washed and halved
  • Cayenne pepper (to taste, optional)
  • Butterleaf lettuce leaves (to make wraps, optional)
  1. In a large salad bowl add the spinach and celery.
  2. Next add the crumbled tuna and cubed avocado.
  3. In a small bowl, whisk together the the olive oil, vinegar, sea salt, pepper, and minced garlic.
  4. Add in the grapes.
  5. Drizzle the dressing over the salad.
  6. Add the capers, toss together and serve.
