I don’t usually buy mini peppers (they aren’t the best for arthritis as they belong to the nightshade family) but their bright colors caught my eye and I couldn’t help myself. I was thinking maybe I can make a dip and we could eat them as is but then opted to roast them instead. The aroma filled the apartment, getting even my kids to ask “ooohhh what’s that smell?” When I said peppers, the reactions weren’t exactly enthusiastic, but then they tasted it!! Boy, I didn’t expect for them to enjoy it so much. Loved it!!!

1 tbsp extra virgin olive oil
1/2 tsp salt
1/4 tsp pepper
1/2 tsp garlic powder
1/2 tsp dried oregano
Preheat your oven to 400 degrees F.Line a large baking sheet with foil.Cut the mini peppers in half lengthwise, removing the seeds.Place the mini peppers in a large bowl and toss them with the olive oil, salt, pepper, garlic powder and oregano.Arrange the seasoned mini peppers in a single layer on the prepared baking sheet.Bake until tender, 20-30 minutes. Serve the roasted mini peppers immediately.
