Mother’s Day is coming up soon. If you’re looking for a recipe to surprise your mom with, this is a winner. I do have to say though, if she isn’t a fan of spice, you may want to hold back on the red pepper flakes. Serve it with some warm dinner rolls and you’re all set!

  • 8 oz pasta (any kind works)
  • 2 tbsp olive oil
  • 4 tbsp butter, divided
  • 1 tsp red pepper flakes
  • 1 lb cleaned and deveined Shrimp
  • Salt, to taste
  • Pepper, to taste
  • 10 oz frozen chopped spinach
  • 1/2 cup Parmesan cheese
  • 2 tbsp parsley, chopped
  • 1 tbsp lemon juice
    In a large pot, cook the pasta according to package directions.
    Drain and set aside.
    Using the same pot, heat the olive oil and 2 tbsp of butter.
    Add the garlic and red pepper flakes and cook, stirring till fragrant.
    Next add the shrimp and season with salt and pepper.
    Cook until the shrimp turns pink.
    Remove from heat and set aside, leaving behind any juices and butter-oil mix in the pot.
    Next add the frozen spinach to the pot and cook till defrosted.
    Season with the Italian seasoning and cook till all the water has evaporated.
    Add the pasta and shrimp back to the spinach mix.
    Add in the remaining butter, Parmesan cheese and parsley and mix well.
    Add the lemon juice and serve hot.
