Mother’s Day is coming up soon. If you’re looking for a recipe to surprise your mom with, this is a winner. I do have to say though, if she isn’t a fan of spice, you may want to hold back on the red pepper flakes. Serve it with some warm dinner rolls and you’re all set!
- 8 oz pasta (any kind works)
- 2 tbsp olive oil
- 4 tbsp butter, divided
- 1 tsp red pepper flakes
- 1 lb cleaned and deveined Shrimp
- Salt, to taste
- Pepper, to taste
- 10 oz frozen chopped spinach
- 1/2 cup Parmesan cheese
- 2 tbsp parsley, chopped
- 1 tbsp lemon juice
- In a large pot, cook the pasta according to package directions.
- Drain and set aside.
- Using the same pot, heat the olive oil and 2 tbsp of butter.
- Add the garlic and red pepper flakes and cook, stirring till fragrant.
- Next add the shrimp and season with salt and pepper.
- Cook until the shrimp turns pink.
- Remove from heat and set aside, leaving behind any juices and butter-oil mix in the pot.
- Next add the frozen spinach to the pot and cook till defrosted.
- Season with the Italian seasoning and cook till all the water has evaporated.
- Add the pasta and shrimp back to the spinach mix.
- Add in the remaining butter, Parmesan cheese and parsley and mix well.
- Add the lemon juice and serve hot.
