• My son LOVES quiche! If he could have it his way, he would have it everyday. So needless to say, I end up making this pretty often.
  • This recipe is very versatile. You could use spinach or broccoli, throw in some ham etc. Basically you can make it your own. So go ahead and get creative, post some pictures in the comments of your creations.
    • 1 tbsp olive oil
    • 1 onion, diced small
    • 1 clove garlic, minced
    • 1 (10 oz) box frozen spinach
    • 5 large eggs, beaten
    • 3 cups shredded semi soft cheese (I like Muenster)
    • 1/4 tsp salt
    • 1/4 tsp pepper
      Preheat the oven to 400°F.
      Lightly grease a 9-inch glass dish and set in heating oven.
      In the meanwhile, heat oil in a wide pan over medium heat.
      Add onions and cook stirring occasionally till softened.
      Next add the spinach and cook until all the moisture has evaporated.
      Remove from heat.
      In a separate bowl, combine eggs, cheese, salt and pepper.
      Stir in the cooked spinach mix.
      Carefully remove the the glass dish from the oven and pour in the entire mix.
      Bake until set, approximately 25 minutes.
      Cool slightly, slice and serve.
