- 1 tbsp olive oil
- 1 onion, diced small
- 1 clove garlic, minced
- 1 (10 oz) box frozen spinach
- 5 large eggs, beaten
- 3 cups shredded semi soft cheese (I like Muenster)
- 1/4 tsp salt
- 1/4 tsp pepper
- Preheat the oven to 400°F.
- Lightly grease a 9-inch glass dish and set in heating oven.
- In the meanwhile, heat oil in a wide pan over medium heat.
- Add onions and cook stirring occasionally till softened.
- Next add the spinach and cook until all the moisture has evaporated.
- Remove from heat.
- In a separate bowl, combine eggs, cheese, salt and pepper.
- Stir in the cooked spinach mix.
- Carefully remove the the glass dish from the oven and pour in the entire mix.
- Bake until set, approximately 25 minutes.
- Cool slightly, slice and serve.
