My 10 year old son is at sleep away camp and my 4 year old daughter is miserable without him. So to keep her entertained, I thought we could bake something together. Of course she comes up with chocolate chip cookies since they are her brothers favorite! But we did a twist.. we made banana chocolate chip cookies! And they are soooo good… so chewy! And they are eggless!! Try it for yourself.

But first, let’s talk about one of the ingredients- bananas. This fruit is truly incredible! They can help to combat depression, make you smarter, cure hangovers, relieve morning sickness, protect against kidney cancer, diabetes, osteoporosis, and blindness. Plus they can even cure the itch of a mosquito bite and put a great shine on your shoes. And next time don’t shy away from an over ripe banana – the riper the banana, the more nutrients it has!

  • 1 cup flour (all purpose, whole wheat or gluten free)
  • 3/4 tsp baking powder
  • 1/2 tsp ground cinnamon (optional)
  • 1/4 tsp salt
  • 1-1/2 tbsp unsalted butter, melted
  • 1 tsp vanilla extract
  • 1/4 cup mashed banana
  • 1 tbsp nonfat milk, room temperature
  • 1/3 cup sugar (coconut sugar is ideal)
  • 3 tbsp chocolate chips, divided
  1. In a medium bowl, whisk together the flour, baking powder, cinnamon, and salt.
  2. In a separate bowl, stir together the butter, vanilla, mashed banana, and milk.
  3. Stir in the coconut sugar.
  4. Add in the flour mixture, stirring just until incorporated.
  5. Fold in 2 ½ tablespoons of miniature chocolate chips.
  6. Chill the cookie dough for 30 minutes.
  7. Preheat the oven to 350°F, and line a baking sheet with parchment paper.
  8. Drop the cookie dough onto the prepared baking sheet using a spoon and a spatula.
  9. Flatten the cookie dough to the desired thickness and width.
  10. Gently press the remaining miniature chocolate chips into the tops.
  11. Bake at 350°F for 9-11 minutes.
  12. Cool on the baking sheet for 10 minutes before transferring to a wire rack.
